Spicy Raw Collard Green Burritos

Ingredients:

Filling

  • 1 cup walnuts, unsalted
  • ¼ cup sunflower seed, unsalted
  • 1 tbsp oil
  • 1 tbsp water
  • 1 tsp flax seeds
  • ½ tsp chili powder
  • ½ tsp cumin seeds
  • ¼ tsp cayenne
  • ¼ tsp salt
  • ½ clove garlic

Fresh Salsa

  • 2 roma tomatoes, diced
  • 1 avocado, diced
  • 1 lime, zested and juiced
  • ½ clove garlic, pureed
  • ½ jalapeno, seeded and minced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp oil
  • ¼ tsp salt
  • Black pepper (to taste)

Toppings

  • 4-6 large collard green leaves
  • 1 large carrot, grated
  • 1 red pepper, julienned
  • 1 yellow pepper, julienned
  • 1 medium zucchini, grated
  • Alfalfa sprouts (to taste)
  • Fresh cilantro (to taste)

Directions:

In a food processor add all ingredients for filling. Process until a chunky but fully incorporated consistency is reached. Set aside. In a medium bowl add all ingredients for salsa and fully incorporate. Set aside. Next, take one collard green leaf. Fill with toppings of your choice length wise, going with leaf’s rib (it makes it easier to roll). Next add walnut filling and salsa. Roll wrap like you would with a regular bread wrap. Cut in two and serve. Repeat with remaining leaves.
