Raw peach and mint pie

Makes 8 servings

 Ingredients:

Crust:

  • 1 cup dried dates, pitted
  • 1 cup pecans
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Filling:

  • 3 cups peaches, diced, divided
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 pinch of allspice

Garnish:

  • ¼ cup mint, chiffonade

 

Directions:

  1.  In a food processor add all crust ingredients and process until mealy and sticky, but not completely smooth, about 3 minutes. Remove from processor and evenly press into a 9 inch pie plate.  Set aside.
  2.  Clean and dry food processor.  Next, in the food processor add ½ of the peaches, maple syrup, vanilla and allspice. Process until smooth, about 2 minutes.  Remove into a small bowl and stir in the remaining peaches.  Pour over crust and sprinkle with mint.  Serve.
