Vietnamese Salad Rolls w/ a Spicy Peanut Sauce

Wrap Ingredients

  • Rice Papers
  • Tofu, cut into strips and marinated in soy sauce & sesame oil (optional)
  • Carrots, grated
  • Cucumber, julienne
  • Red Pepper, julienne
  • Mushrooms, sliced
  • Avocado, sliced
  • Fresh basil leaves
  • Fresh cilantro leaves
  • Fresh mint leaves

Directions:

Wet rice paper and set flat on a clean surface. Fill with your favourite ingredients and roll. Set aside in tact. Repeat until desired number has been reached. Do not allow rolls to touch as they will stick together. When ready to eat, cut in half and serve with your favourite peanut sauce.

Spicy Peanut Sauce Ingredients

  • ½ cup unsweetened natural peanut butter
  • ½ cup water
  • ¼ cup rice wine vinegar
  • ¼ cup soy sauce
  • 2 tbsp sweetener (maple syrup or agave)
  • sambal (to taste)

Directions:

In a small sauce pan add all ingredients and whisk together. Bring to a simmer. Once simmering, remove from heat. Refrigerate for 10 minutes. Serve with fresh salad or spring rolls.
