Chia Cherry Pie

Makes 24 servings

Ingredients

Crust:

  • 3 cups dates
  • 1.5 cups pecans
  • 2 tbsp  coconut oil
  • 1 tsp vanilla

Filling:

  • 3 cups cherries, pitted & halved, divided
  • 2 cups dried dated
  • 3/4 cup water
  • ½ cup chia seeds
  • ½ cup maple syrup

Directions:

  1. In a food processor add all crust ingredients and process until mealy and sticky.
  2. Next press crust into 2, 9 inch pie plates and set aside.
  3. Next in a food processor add 2 cups of cherries and the remaining filling ingredients.  Process until smooth.  Pour into the 2 pie plates.  Garnish with remaining cherries.  Place in fridge for 15 minutes to allow to set.
